Berry and Coconut Custard (Weston A Price/Paleo Toddler Treat)

Let’s face it! Kids (and adults) need some treats. We all have a sweet tooth, but that doesn’t have to mean we eat something unhealthy. This custard is only slightly sweet, so it is great for young toddlers. It is packed with healthy fats that contain choline, fat soluble vitamins, gelatin for the bones and skin, and berries for healthy carbohydrates and Vitamin C.

Berry and Coconut Custard

Ingredients:

  • 3 dates (pitted)
  • 4 TBSP coconut oil
  • 5 drops lime juice
  • 4 TBSP grass-fed butter
  • 2 whole eggs
  • 2 egg yolks
  • 1 TBSP gelatin
  • 1 tsp vanilla
  • 1/4 cup water
  • berries

Directions:

1. Take room temperature eggs, and place them in a saucepan with cool water.

2. Heat the pan until the temperature reaches just above 140◦F. Check using a thermometer.

3. Keep the eggs at this temperature for 3-5 minutes. You may be able to remove the pan from the heat to prevent it from overheating.

4. Take the eggs out of the water and rinse in cold water.

5. Crack the eggs and separate the yolks for two of the eggs. Save the whites for another meal.

6. Melt the coconut oil and butter.

7. Put everything in the blender except the water and gelatin.

8. Pour the gelatin in the water, and let it bloom for 1 minute.

9. Add the water/gelatin to the blender and mixed everything together.

10. Pour it in dishes. Gently push berries down into the custard cups.

11. Place in the refrigerator to harden for at least 30 minutes.
